Having a break and getting the effective ways for a sensational vacation!

coverA change of place – a change of perspective? Do you ever get tired from the daily stresses and routines at work? You’re not alone. It’s something that affects most people on a disturbingly regular basis. One solution to this widespread problem is to take a year off. That’s right. Research suggests that taking a sabbatical can work wonders for your personal productivity, boosting your creativity and renewing your vigor.

Can you imagine the fun of having a full year off to do pretty much whatever you wanted to do? You could study any subject imaginable, broaden your skills and catch up with any elements in your education that might’ve been neglected. We never stop learning! People tend to come back from their sabbaticals with a fresh perspective, new ideas, enhanced creativity and a lot more energy and enthusiasm for their job.

Less ambitious departures from work usually show up in our lives as vacations. They’re supposed to give us the chance to re-charge our batteries and take a welcome break from the stresses of daily life. But the benefits tend to last about as long as the holiday suntan. As soon as we get back from our well-earned holiday, we slip so easily into our old habits, and the stresses of life close around us once more like the dank walls of a prison. So how do we preserve the benefits of that refreshing change of scene and bring those fantastically positive feelings back into our daily lives? How can we capture the restorative elixir of our vacation and carry it with us every day, a portable feast that refreshes our minds and bodies and equips us to face the challenges of the daily grind? ‘Is it even possible?’
It isn’t always practical to take a year off and make the most of a real sabbatical, though many successful corporations have encouraged senior staff to do just that. And it might not be possible within your company’s organizational framework to disappear for a few days every month to de-stress. I learned from a much wiser individual many years ago that it was essential to make time to get away from the daily routine as often as possible. In my case, that meant getting away every month.

The change of scenery worked wonders. Problems that had been crowding the agenda and causing untold stress in the workplace were much easier to resolve when we were away from the familiar battle ground of the company office. It’s that essential change of environment that helps us to shift our perspective. The distance surely helped too, being physically remote from the source of the problem helped to place the challenge within a clearer, wider context. So it was much easier to fix. Usually within about thirty minutes of arriving in the new location! So the method is superbly effective. We step away from the arena and suddenly everything looks different. 11349928_10207142960271359_263438334_nThat’s why the breaks are so important. They are not a luxury option. They’re a powerful answer to the debilitating stresses and pressures of modern life. And they make us much more effective in the workplace. It’s a fact. And our mission in preparing this personal guide to capitalizing on every moment that you snatch away from the voracious demands of your working day is to share the most effective techniques for bringing the power of the holiday experience back to the office. Happily, no exotic costumes or hard liquor are required. Unless, of course if it’s company policy.

11426692_10207142967471539_282087131_nKnow the methods that have been divided into ten, easy-to-grasp principles and each one can be approached separately or as a cluster of behaviors – or you could just decide to get your money’s worth and adopt all ten of the methods! Come on. It’s your life. Don’t short-change your potential to be a happier, more productive, healthier, more successful, energized and creative you. It’s the only life you’ve got so let’s not waste another second of it. Get your copy of the 10 Steps to a Sensational Summer and rock on to your relaxing vacation!

Macadamia Feta

The first time I tasted this Feta I was amazed at just how smooth, creamy and cheesy it was! It is so easy to make and really tastes like a soft Feta and can be used to replace animal Feta in any dish.

1 cup soaked macadamias (for around 24hrs in purified water)
1/3 cup freshly squeezed Lemon juice
3 tablespoons cold pressed extra virgin olive oil
1 clove garlic, crushed
Quarter teaspoon low sodium salt
1 contents of pro-biotic capsule (optional)
1/3 cup cold filtered water (add slightly more water if necessary for blending).

How to make:
Place nuts into the blender. Blend all of the ingredients until it has a smooth creamy consistency (about 5 minutes).
Remove the mixture from the blender and place the cheese in a nut bag or cheesecloth and squeeze out any excess liquid, twist around cheese, forming into an orange size ball and squeezing to help extract moisture.
Secure with a rubber band or kitchen twine.
Place the cloth over a strainer.
Put it in the refrigerator to set for about 12 hours.
Be sure to put a bowl underneath the strainer to catch any runoff.

After it has set, you can serve as is or if you would like it to be firmer, remove the cheese from the cloth or nut bag and shape into a disc.
Place it on a teflex sheet and slightly flatten it.
Dehydrate at 115 degrees for about an hour.
When cooled refrigerate in an airtight container.

Spectacular Eggie Salsa

2 pounds fresh ripe tomatoes, peeled and coarsely chopped
2 to 3 serrano or jalapeño chiles, seeded for a milder sauce and chopped
2 garlic cloves, peeled, halved, green shoots removed
1/ 2 small onion, chopped
2 tablespoons oil
Low sodium salt to taste
4 to 8 eggs (to taste)
Chopped cilantro for garnish

Place the tomatoes, chiles, garlic and onion in a blender and puree, retaining a bit of texture.
Heat 1 tablespoon of the oil over high heat in a large, heavy nonstick skillet, until a drop of puree will sizzle when it hits the pan.
Add the puree and cook, stirring, for four to ten minutes, until the sauce thickens, darkens and leaves a trough when you run a spoon down the middle of the pan. It should just begin to stick to the pan.
Season to taste with salt, and remove from the heat.
Keep warm while you fry the eggs.
Warm four plates.
Fry the eggs in a heavy skillet over medium-high heat.
Use the remaining tablespoon of oil if necessary.
Cook them sunny side up, until the whites are solid but the yolks still runny.
Season with salt and pepper, and turn off the heat.
Place one or two fried eggs on each plate.
Spoon the hot salsa over the whites of the eggs, leaving the yolks exposed if possible.
Sprinkle with cilantro and serve.
