Spicy Turkey Stir Fry

​Ingredients:

2 lbs. boneless skinless chicken or turkey breasts, cut into 1-inch slices

2 tbsp coconut oil

1 tsp cumin seeds

1/2 each green, red, and orange bell pepper, thinly sliced

1 tsp garam masala

2 tsp freshly ground pepper

low sodium salt, to taste

Scallions, for garnish

 

For the marinade:

1/2 cup coconut cream

1 clove garlic, minced

1 tsp ginger, minced

1 tbsp freshly ground pepper

2 tsp low sodium salt

1/4 tsp turmeric

​Instructions:

Place all of the marinade ingredients into a Ziploc bag. Add the turkey, close the bag, and shake to coat.

Marinate in the refrigerator for at least 30 minutes, or up to 6 hours.

In a wok or large sauté pan, melt the coconut oil over medium-high heat. Add the cumin seeds and cook for 2-3 minutes.

Add the marinated turkey and let cook for 5 minutes. Stir the turkey until it begins to brown, and then add the peppers, garam masala, and freshly ground pepper.

Sprinkle with low sodium salt. Cook for 4-5 minutes, stirring regularly, or until the bell pepper is cooked to desired level. Serve hot.

Spectacular Spaghetti and Delish Turkey Balls

Ingredients:

​​1 spaghetti squash

Extra virgin olive oil,

low sodium salt and pepper

1 tsp dried or fresh oregano

 

For the sauce:

1 lb ground turkey

1 small onion, chopped

4 cloves garlic, minced

1 tbsp coconut oil

1 tomato, chopped

1/2 jar of tomato sauce

1 tbsp Italian seasoning

low sodium salt and pepper to taste

Fresh basil​

 

Instructions:

Preheat oven to 400 degrees F. Using a sharp knife, cut the squash in half lengthwise. Scoop out the seeds and discard.

Place the halves with the cut side up on a rimmed baking sheet. Drizzle with olive oil and season with low sodium salt, pepper, and oregano. Roast the squash in the oven for 40-45 minutes, until you can poke the squash easily with a fork.

Let it cool until you can handle it safely. Then scrape the insides with a fork to shred the squash into strands.

While the spaghetti squash is roasting, melt coconut oil in a large skillet over medium heat.

Add chopped onion and garlic and cook for 4-5 minutes. Add ground turkey and brown the meat, stirring occasionally. Season with low sodium salt and pepper.

Add the chopped tomato, tomato sauce, and Italian seasoning and stir to combine. Simmer on low heat, stirring occasionally, while the spaghetti squash finishes roasting. Serve over spaghetti squash with basil for garnish.

The Skinny Delicious Diet…My First Two weeks…A Detailed Report!

The Skinny Delicious Diet is a revolution that will change the lives of millions of people, at the contrary of all the other tried and tested diets.

Before I start, I will first make a little introduction about myself. I am a Mediterranean lady, I am 33 years old, and I have a sedentary 9 to 6 office job in an institution. I suffer from hypothyroidism and I am allergic to Gluten. I also come from a family of overweight people. Since I moved to Brussels, my condition worsened because of the lack of Sun, and because of the very rich type of food: French fries, waffles, cheese, pasta, pizza, you name it…This made me gain 20 kilos in less than 6 months…yes, less than 6 months, and I couldn’t recognise myself anymore! I had to live with this body for almost 4 years, going desperately from doctor to doctor, from nutritionist to nutritionist, who every time prescribed me tons of pills and food supplements (shakes, minerals to mix with juice etc…), while ignoring the genetic factor. They were not only very expensive, but I also kept forgetting to take them! I even had one doctor torturing my arms and legs to take a blood sample because she couldn’t find my vein! This left me with bruises for almost 2 weeks! Not to forget the constant fatigue I had, the acid reflux which became unbearable, and my depressive state!

Back to the food supplements and the shakes: I am an active lady, I work all day with one hour lunch break…where will I have the time to start mixing shakes and juice and transform my office into a laboratory?! This is simply impossible! Not only I will attract the weird looks and raised eyebrows of some eco-friendly colleagues making me lectures about how much money I am wasting in these chemical products, but also I would get discouraged by looking at the size of my wallet shrinking, especially when a sympathetic colleague invites you to lunch at the “canteen” to share the latest gossips!

I stayed in this downward spiral until I fell into the miraculous Skinny Delicious Diet that changed my life. Initially, I didn’t like cooking because I didn’t know how to prepare many things, especially salad dressings. I used to buy the ones over the counter, which tasted horrible and to which I always had to add tons of cream and mayonnaise to make it taste normal! The Skinny Delicious Diet taught me how to prepare wonderful salad dressings which I never imagined feasible!

And as a Gluten allergic who loves pasta, I had no choice but to eat real pasta made of wheat, because the Gluten Free pasta sold over the counter tastes horrible…it is mostly made of rice: Imagine rice combined with parmesan cheese…mamma mia! Not only I suffered from acidity, but I also put on more weight until the miraculous Skinny Delicious Diet taught me how to make alternatives for pasta while using vegetables! Would you believe it? I would now!

I started to experiment recipe after recipe, and to take my own food to lunch at work, showing off in front of my colleagues that I can now make gluten-free pasta thanks to the Skinny Delicious Diet!

Day after day, I felt huge differences. First, my energy level increased. I always used to feel tired after work that I even slept at 9 pm! Nice for a young lady of 33 who wants to enjoy life! Then, I felt a huge difference in the way my skin looks. Not only it became softer, but it is glowing like never before and that without sun or make-up! And you would be surprised; I had some wrinkles around my eyes disappearing. No need for expensive creams neither Botox!

I also lost weight, which I never imagined possible few months ago despite the amounts of things I tried! I was so desperate that I even thought that I had to go through invasive liposuction and even worse, bypass surgery, to lose weight. Now, it is out of question! Skinny Eggie Vegetable Stir Fry

Ingredients:

1 lb of Cubed Butternut Squash

1 lb of Green Beans

3 Baby Bok Choys

1½ lb of Eggplants

3 Garlic Cloves

1 small Yellow Onion

½ teaspoon of low sodium salt

½ teaspoon of Black Pepper

1-2 Tablespoons of coconut oil

3 organic eggs

Instructions:

Peel, core, and cut the butternut squash into 1″ cubes.

Snap the ends off the green beans and slice at an angle into 1.5″ long pieces.

Chop the bok choy leaves from the stems. Slice the stems into 1″ thick pieces. Cut the leaves in half.

Slice the eggplants into 1″ thick discs, then quarter the disc into wedges. Slice in half if the eggplant is skinny.

Mince the garlic cloves and slice the onions.

Heat a wok and add the cooking oil.

Add the onions and cook until translucent. About 2 minutes.

Add the garlic and cook for another minute.

Add the squash, green beans, low sodium salt, pepper.

Add the eggplant and bok choy stalks and cook uncovered for another 7-10 minutes.

Add the bok choy leaves and cook for another few minutes, covered.

Beat the eggs and add them to the stir fry …keep stirring till they are cooked through

Sumptious Saffron Turkey Cauliflower Soup 2 tbsp extra virgin olive oil1 medium onion, chopped (about 1 cup) 

2 large garlic cloves, chopped

 

2 lbs frozen or fresh cauliflower florets

 

½ tsp low sodium salt

 

¼ tsp ground black pepper

 

5 cups of water or vegetable broth

 

20 saffron threads

Diced Turkey Breast

  • Sautée onion and garlic in olive oil on a soup pot, over medium heat, until onion is translucent, about 10 minutes.
  • Add cauliflower florets, low sodium salt and pepper and continue cooking for 10-12 minutes
  • Add 5 cups of water, bring to a boil and simmer until cauliflower is tender, 20-25 minutes.
  • Turn off heat. Add saffron, stir and cover. Let the saffron steep for about 20 minutes.
  • Blend soup in a blender until creamy.
  • Add 1 cup diced turkey breast before or after blending
